1.准备材料:白糖、盐、料酒、蒸鱼豉油、蒜末、葱花、剁椒、姜丝和鲳鱼
2.锅内放油,油温5成热放入鲳鱼煎
3.一面煎一会翻个面煎,中火,不要焦了
4.煎至两面微黄,加料酒去腥
5.加入姜丝,加水没过鱼身
6.加蒜末、蒸鱼豉油、白糖和剁椒,对,这道菜的灵魂调料就是剁椒,剁椒虽然辣,但是辣的不尖锐,又有咸鲜味,让鲳鱼更鲜美
7.大火煮沸后转小火煮15分钟,大火收汁,尝下是否需要加盐,一般我都不需要再加盐了,蒸鱼豉油和剁椒里的咸味刚好 20210311
